FLAC compresses audio without any loss, so it's the best source to make an MP3 from: the MP3 is encoded once, from the full sound. Keep the FLAC as your archive and make MP3s for devices that don't play FLAC or have little space.
An MP3 at 320 kbps takes about 2.4 MB a minute, usually well under half a CD-quality FLAC. At 192 kbps it's about 1.4 MB.
Tags such as title, artist and album carry over into the MP3. Hi-res FLAC converts too, but MP3 keeps no bit depth and tops out at 48 kHz, so a 96 kHz track comes out at 48 kHz.
